Cherry Pie Filling Recipe From Frozen or Canned Cherries

The holidays are coming up y’all!  Every holiday gathering – whether Thanksgiving or Christmas – the non-negotiable dishes my family requests of the Taylor Household is that we bring  RancherMan’s Famous Green-Bean Casserole and my sweet, desserty no-cook Cherry Schtuff.  Now in the past I’d simply buy a can of cherry pie filling.  But I was often very disappointed at the abundance of filling and significant lack of actual cherry in those cans.  So these days I’ve found it’s much cheaper and oh-so-much-more delicious to make my own cherry pie filling.  I use either canned or frozen cherries and BOOM!

Every year my aunt shares with us the abundance from her very productive apple tree.  She always goes through quite a bit of trouble to make sure I have all the apples I can possibly tote back home! But in the end RancherMan & I hauled back all we could fit into our small car.  I’ll not let any of them go to waste – I set out to preserve all those beautiful apples!  It was a lot of work but after some time in the kitchen preserving them we have plenty of apple deliciousness in the pantry.  Want to see some of the things I was able to do with them?

Baked Apple Pie Tortilla Rolls

Although almost most of our meals are cooked from scratch.  Sometimes off-the-homestead commitments results in me being unprepared for supper. But in all honesty since I use the cook-once, eat-twice method of cooking, I almost always have a main dish in the freezer for such occasions.

So I served thick charcoal-grilled ham slices, steamed carrots with butter & fresh rosemary and a serving of coleslaw.  The grilled ham slices were simply pulled from the freezer & the steamed carrots were remaining from yesterday’s meal and the coleslaw was in the fridge. So a delicious homemade supper was on the table in a flash. But when I take so many shortcuts for one meal I typically try to make a dessert for that handsome man of mine to make up for the meager offerings. It doesn’t help to make a quick supper if dessert takes lots of time.   I still needed a quick dessert option.  Hey, I know, I’ll use some homemade apple pie filling & a few tortillas to make baked apple pie tortilla rolls!

Rehydrating & Enjoying Previously-Dehydrated Carrots

Remember recently I ended up with a boatload of fresh carrots?  Now there was no way to consume that many carrots before they went bad.  So I was frantically sharing as many as I could with friends, family & neighbors but there were Still.  So.  Many.  Carrots.

So I dehydrated a huge bunch of them so I could enjoy them all winter long in our hot soups & stews. (you can read about dehydrating carrots here) These dehydrated carrots look awesome in my pantry in shining glass jars.  And they take no additional energy to store such as a refrigerator or freezer.  But I wanted to know how they would taste if I reconstituted them to enjoy as a veggie side dish.  Let’s check it out, shall we?

Homemade Strawberry Shortcake Dessert

I love strawberry shortcake, don’t you?  Recently I wrote about making homemade strawberry shortcake dessert for my handsome RancherMan and two of our grandbabies.  It was a lip-smacking dessert that looked and tasted like I’d been in the kitchen for hours.  I’ll never tell them that it was super-easy to whip it all up from scratch – even the shortcake!  C’mon y’all, I’ll let ya in on how I did it.

Recipe: Homemade Shortcake Baked Up In A Flash

Recently we received some really beautiful garden-fresh strawberries.  Oh the beauty of them!  I decided I’d use them to make one of my favorite desserts – strawberry shortcake!  But in the past I always bought the little round shortcakes wrapped in cellophane when I’d made strawberry shortcake.  This time I wanted to make it all from scratch.

So I sat out to find a recipe I liked.  I found one on the AllRecipes site that looked pretty straightforward so I decided to give it a try.  I mean, these beautiful strawberries deserve the best #amiright??

Breakfast Biscuits Are A Company-Worthy Breakfast In A FLASH

I don’t know about you, but when I’m hosting guests I always stress about what to feed them.  Will I be able to make sure they can eat according to the schedule they’re accustomed to?  How will I know when they’re hungry?  Will I be able to whip up something delicious while not being shackled to the kitchen?  And what will I serve?  What, what, WHAT??!!

If you stress about feeding guests too, I’m about to share one of my favorite breakfast-in-a-flash shortcuts.  I like to have ham & cheese egg biscuits.  My guests call them BOBs (Breakfast-on-a-Biscuit)  The beautiful thing is I can make everything in advance & just assemble & enjoy.

Only 3-Ingredients For Quick Cake-Mix Cookies!

Did you ever want to make up a  batch of cookies in a flash, but really didn’t want to go through the whole ordeal?  You know, pull out your cook book, look up recipe, pull out all the ingredients, etc?  Well boy do I have exciting news for you: Cake Mix Cookies!  Only 3 ingredients, y’all, mix ’em up, bake ’em up, DONE.  Recently we were invited to a dinner at a family member’s house and I asked what we could bring.  The hostess requested RancherMan’s famous Green Bean Casserole so of course we made that to contribute to the meal.  But I thought it would be a nice touch to bring something sweet that we could graze on as we visited. Maybe finger food that wouldn’t dirty up any additional dishes for our hosts. Enter cake-mix cookies.  Since it’s so simple I don’t need to look up a recipe.  I just mix & bake.  Check it out, y’all

Fresh Garden-Veggie Pico de Gallo in Minutes!

RancherMan & I love pico de gallo.  That zesty mix of tomatoes, onion, garlic and jalapenos is one of our favorite ways to enjoy garden veggies.  This year RancherMan even requested that I plant a pico de gallo garden to assure we can enjoy that culinary delight whenever we like.  I was, of course, happy to oblige him!  I always have onions and garlic planted anyway.  Of course I have tomatoes planted every year as well.  And c’mon, there’s never gonna be a garden season when I don’t have copious amounts of jalapenos growing out there.  So I just needed to include cilantro in my planting plan to fulfill his request.  Recently we were invited to a family cookout so we told them we’d bring fresh homemade pico de gallo.  You’re not gonna believe how quickly it all comes together!
