Taste of Fall: Fresh Pear Cake

It’s pear season y’all!  I’ve been allowed to harvest a few pears from trees around town so I’ve been making and canning lots of pears. From RancherMan’s favorite Pear Preserves as well as my fave: Pears in Light Syrup.  We’ll enjoy them all winter long and some jars could also end up in a few of our Homemade Christmas Baskets this year.  But a friend from church mentioned she had several pears that were given to her and she was going to make a pear cake with them.

I’d never even heard of pear cake, and I wasn’t sure I was even tempted by the thought.  But a couple of days later I met up with her and she said she’d made the cake and asked if we wanted to try it.  Hummm…  Pear cake??  Sure, I guess…   WOW – it was amazing, all cinnamon & spice fall-tasting deliciousness with soft chunks of pear. And RancherMan went crazy over it.  So of course I wanted to make it for him.  Thankfully she shared her recipe with me (thanks Sue!)

Apple Pie Made With Home-Canned Apples

Recently I wrote about all the things I was able to make and preserve using the apples my aunt shared with me from her very prolific backyard apple tree.  I of course made and canned apple pie filling but also applesauce, both plain and cinnamon/vanilla flavored and dehydrated crispy cinnamon/sugar apple slices.  But now it’s time to put that apple pie filling to the test – let’s see what kind of convenience food I’ve been able to provide for the supper table.

Canning Recipe: Homemade Apple Cider

Well, we’re almost at the end of our Fresh Apple Series where I share various things I’ve been able to preserve using fresh apples in the peak of their season.  And what a series it’s been!   I’ve of course made Slow-Cooker Applesauce with many of the apples.  I’ve even made and canned some of that applesauce into Cinnamon-Vanilla Flavored Applesauce.  Plus I  made and canned Apple Pie Filling for quick homemade pies.  And of course one of RancherMan’s favorites too.  I dehydrated some of those delicious apples into crispy Cinnamon/Sugar Apple Chips.  But we’re not done yet, oh no!  Those apples still have deliciousness to offer to our family.   Today I’m sharing how I preserved my Homemade Apple Cider.

Canning Recipe: Homemade Cinnamon-Vanilla Applesauce

Remember my aunt shared with me several bushels of sweet ripe apples from her backyard tree?  Well y’all, I’m still working on getting all of those delicious apples preserved.  One of my easiest go-to things to do with lots of fresh apples is to use my slow cooker to make homemade applesauce.  I take those apples that might be not quite right for eating fresh or pretty enough for making apple pie filling and turn them into applesauce.  You know the ones, those beautiful apples that maybe have a wind-fall bruise or small bird peck that needs to be cut out – none of that matters if I’m making applesauce!  I like to use plain unsweetened applesauce as a delicious snack and also as a replacement for some of the oil I use when baking.  But I have a LOT of applesauce and I’m thinking about maybe using some of it for an even sweeter treat – Cinnamon-Vanilla flavored applesauce.  It couldn’t be easier, check it out!

Easy Homemade Applesauce

When I find myself with bushels of apples as I did recently I like to preserve that sweet fall deliciousness.  There are many fun things to do with them – I’ve made and canned Apple Pie Filling for quick homemade pies, made Crispy Cinnamon/Sugar Apple Chips for RancherMan’s snacks and even made Dehydrated Apples to use for the dried fruit in my homemade pumpkin granola.  But sometimes there are apples that have a windfall bruise or a small bird peck that needs to be cut out that doesn’t leave them with the appearance I want for those uses.  I don’t waste those less-than-perfect apples – I make homemade applesauce with them!  Although I enjoy applesauce as a sweet natural snack, I also like to use unsweetened applesauce as a replacement for some of the oil in my baking so making applesauce is a double-win for the food budget.  I recently wrote a piece for the Mother Earth News about how my slow cooker makes it so easy to make homemade applesauce, check it out!

September 11th, 2001 – Where Were You?

September 11th, 2001, a day most Americans were changed forever.   I worked at an international trade association and they held a huge convention each year in September.  As the Director of Administrative Services, it was part of my job to attend this convention each year along with other executives of our association.  It’s a huge amount of work and it takes many hands to assure a smooth successful convention.  This year the convention was in Florida so I packed the night before to make sure I can get to the airport the next day to make my early-morning flight.  Little did I know this day would change my life and the lives of all my fellow Americans forever!

Preserving The Harvest: Dehydrated Cinnamon/Sugar Apple Chips

Today I’m continuing on with my series on Preserving Fresh Apples.  My aunt shared many bushels of apples from her tree this year and I’m making sure to get them all preserved, I certainly don’t want that apple deliciousness to go to waste!  I’ve been busy making and canning apple pie filling, apple butter, applesauce, etc. but one of RancherMan’s favorite ways to enjoy these apples is for me to sprinkle apple slices with with cinnamon & sugar and dehydrate them into sweet apple chips.  Check it out!
