Every year my aunt shares with us the abundance from her very productive apple tree.  She always goes through quite a bit of trouble to make sure I have all the apples I can possibly tote back home! But in the end RancherMan & I hauled back all we could fit into our small car.  I’ll not let any of them go to waste – I set out to preserve all those beautiful apples!  It was a lot of work but after some time in the kitchen preserving them we have plenty of apple deliciousness in the pantry.  Want to see some of the things I was able to do with them?

Baked Apple Pie Tortilla Rolls

Although almost most of our meals are cooked from scratch.  Sometimes off-the-homestead commitments results in me being unprepared for supper. But in all honesty since I use the cook-once, eat-twice method of cooking, I almost always have a main dish in the freezer for such occasions.

So I served thick charcoal-grilled ham slices, steamed carrots with butter & fresh rosemary and a serving of coleslaw.  The grilled ham slices were simply pulled from the freezer & the steamed carrots were remaining from yesterday’s meal and the coleslaw was in the fridge. So a delicious homemade supper was on the table in a flash. But when I take so many shortcuts for one meal I typically try to make a dessert for that handsome man of mine to make up for the meager offerings. It doesn’t help to make a quick supper if dessert takes lots of time.   I still needed a quick dessert option.  Hey, I know, I’ll use some homemade apple pie filling & a few tortillas to make baked apple pie tortilla rolls!

Preserving Apples Deliciously: Fruit Leather Roll-ups

Apples, apples everywhere!  My aunt shared ten whopping bushels with us this year!  As I mentioned a couple of weeks ago, there were many delicious things we did to preserve the apples but I tried something new this year:  Fruit Roll-Ups!  I made the fruit leather using nothing but homemade unsweetened applesauce.  There was no need to add sweetener, the apples were sweet enough all by themselves! And then I made another batch where I stirred in about a tablespoon of cinnamon & made apple/cinnamon roll-ups.  It couldn’t have been easier!  I share many of the ways I preserved these fresh apples at the bottom of the post, but for now let’s check out these fruit roll ups!

September 11th – We Will Not Forget

September 11th has become a somber day of remembrance. What were YOU doing on that fateful day?  I’ve written before about my experience with that horrible day. September 11th, 2001.  A day I’ll never forget.  Do you remember where you were on that day?

September 11th. A sad day in our history. My prayers continue for our beloved country, that we may always remember who we are. We're Americans. That's what's important! #TaylorMadeHomestead

But although those memories are painful, they’re still part of our history.  In those days of horror there was a real, shining thing to see.  We witnessed real American moxxy.  We came together as a nation.  We dropped our petty bickering about the trivial matters of the day and we came together to help each other.  We quit being ‘Us’ and ‘Them’ and just became Americans.  Strong.  Proud.  Americans.

My prayers continue for our beloved country, that we may always remember who we are.  We’re Americans!

Fall-Back Friday: Reducing Food Waste

Cantaloupe Bread with Pecan Praline Glaze

My veggie garden did very well this year.  Usually by the middle of July the searing sun has wiped out anything that struggled to remain during the hot summer months.  But even though it’s been hot this year my garden has provided garden deliciousness well into the fall months.  Yea!  One of the fall feast-or-famine goodies from the garden is cantaloupe.  Now I didn’t plant cantaloupe this year, the vines volunteered from my compost.   But I let them grow to become a living mulch for the rest of the garden.  RancherMan eats only a modest amount of fresh cantaloupe & although I love it, how’s a girl to eat that much by herself??  I wondered if there was something I could do with all the excess cantaloupe – as it turns out, there is!

How To Make Pear Sauce With Fresh Pears

A sweet neighbor offered to let RancherMan & me come harvest from their huge pear tree.  We took a ladder but only had to pick the sweet pears within our reach to bring  back about 75 lbs of fresh pears!  I’ve heard of people making something similar to applesauce but using pears instead – Pear Sauce!  I love applesauce so I figured I should give it a try.  Using my slow cooker it was super easy too, the procedure is the same as when I made applesauce.  Check it out!

Pear Relish Recipe – Sweet & Savory Come Together Beautifully!

I’ve heard that pear relish is delicious but… I dunno. I mean sweet pears coupled with savory onions & bell peppers? And jalapenos? And MUSTARD? Blech! I’ve never been a fan of sweet & savory tastes together. But RancherMan asked me to get the recipe from a friend so I did. The instructions she sent were kind of vague and the recipe seemed to make quite a lot . What if all that food & work were wasted because, well… (see pears vs peppers & onions argument above!) So I made a small batch just to check it out. After sampling the results we found it delicious!  RancherMan has already asked me to make it again, this time a full batch #ifyouplease!
