TAMMY’S NOTE: This No-Sugar challenge documents Ashley’s 30-day attempt to remove PROCESSED SUGAR from their diet.  This challenge allows her to use natural sugars such as fruit, honey or true maple syrup, therefore it’s not meant for a diabetic alternative, simply a personal-health challenge. 

I used to make chocolate no-bake cookies for our kids all the time when they were growing up – it was one of their faves and they begged me to make them often.  Even our youngest who was not a big chocolate-flavor fan (I know, hard to believe she’s actually my kid, huh??)  Anyway, our guest-poster Ashley recently shared with us her four-week journey of a diet with NO refined sugar at all!  This no-sugar version of chocolate no-bake cookies was shared on her FINAL WEEK’s update.  What a great sugar-free spin on a favorite recipe!  And since it’s no-bake there’s the added bonus of not heating up the house on a hot summer’s day.  You’re gonna want to make these SOON!

from Ashley :  One of the things that has kept me sane through the month of switching my diet so drastically is finding desserts that were free of refined sugar. One of my favorite childhood memories was my mother filling a cake plate with No-Bake Chocolate cookies. This recipe has it all! No oven time heating up the house during the summertime and CHOCOLATE. It’s so quick and easy that it can cure the strongest craving in no time at all!

No-Bake Sugar-Free Chocolate Peanut Butter Cookies

This recipe is not new, it has certainly been floating around the internet forever and my mom made them for me growing up.  But they don’t require baking and more importantly, don’t require sugar. I like to think that I threw a tasty spin on them as my husband told me they were the best he has ever tasted. It’s simple. Here’s all you do:

Ingredients

Ingredients:

  • 1 Cup Natural Peanut Butter (I used chunky, but smooth is fine too)
  • ½ Cup Coconut Oil
  • ½ Cup Honey
  • ¼ Cup 100% Maple Syrup (I think this gives it a special flavor, but you can do all honey instead)
  • 3 tsp Vanilla Extract
  • 2 ¼ Cup Rolled Oats (you could probably use quick oats for this but I prefer the rolled)
  • 6 Tbsp Cocoa Powder (I may or may not have measured a little heavy on this and got closer to 7 tbsp) 😉

Instructions

Instructions:

  1. Ok, are you guys ready for this? You combine all of your ingredients until evenly mixed and spoon the mixture onto wax paper or a cookie sheet. I used a 2-tablespoon cookie scoop for mine - so worth it if you don’t have one already! If your coconut oil is solid, you may need to heat it up just enough to make it liquid, but that’s it! You’re done! Since the coconut oil melts at room temperature, you need to store these in the refrigerator. Trust me, it’s worth it.

    This may be picky, but this recipe is not “sugar free”. A diabetic would have a problem with this recipe because honey and maple syrup are both sugars. Although there is no white granulated sugar in this recipe, there is definitely still sugar in it. I found the title to be misleading, myself. Love your blog. You have a great format with lovely photographs.

      I agree, and I think Ashley addressed the specifics of her personal 30-day challenge in her first line when she said “…eliminating processed sugar from our diet”. Her challenge allowed natural sweeteners like honey, etc but her challenge was to eliminate processed sugar, I think her no-sugar challenge was more of a dietary challenge, not a health-issue one. I have family members who are diabetic and realize that even natural sugars can affect them so I’ve added a clarification note on the top of all four weeks just to make sure everyone knows to keep their own dietary restrictions in mind when considering any recipe, regardless of the method used to sweeten.       I’m the other way Stefani, I love the taste of honey so much I’ve never made it with syrup, but Ashley has encouraged me to at least give it a half and half try since apparently the maple syrup makes a huge difference in the taste for her. I may just have to give it a go! ~TMH~

    God is so awesome, and so as not to go on and on I’ll leave it at that. No I won’t it won’t make sense. I have been overweight all my life of 68 yrs. I have now having trouble with my knees and sugar because of my abuse of sugar. I have been halfheartedly try for a couple of years or more to lose weight. In the last 2 week the ducks are lining up in a row it’s about being healthy and not ALL about the calories. I was on a sewing blog(I’m a quilter) and while browsing I ended up here. You are my last Duck. Like you said I know it’s going to be hard for a while but with God all things are possible. I’m challenging myself to your four week of no sugar. . At church last night I was so disappointed with myself for slipping up a couple of times on a diet because I really want to do this. I was reminded I’m not perfect and will make wrong choices sometimes. But with you tips and recipes there won’t be many. One day at a time to a new eating style. I will be rereading your challenge many times for inspiration. I will post every Monday how I’m doing if you’re interested. Thank you, thank you and thank you. Blessings Tonia

      My recipe is different too Colleen, I’ve always used the standard no-bake recipe and it’s so delicious! But Ashley’s version using coconut oil was refreshing – especially since I stored the cookies in the fridge to keep them more solid in texture. A delicious cooled cookie is a beautiful thing indeed during the hot humid summers here in NE Texas! ~TMH~
