60-Second Single-Serve Microwave Mug Brownie

Although we don’t eat lots of sweets, I love chocolate & RancherMan has a sweet tooth.

But with only two of us in the house these days I know better than to whip up a chocolate cake or the like when we’re in the mood for something sweet (and CHOCOLATE!) So what’s a girl to do?

Here’s how the conversation went recently about an hour after supper: 

RancherMan – “It sure would be nice to have something sweet.” 

Me – “OK, how about I make a hot homemade brownie just for you?” 

Really, that’s all the preplanning it took! 

After mixing a few ingredients and 60-seconds in the microwave I presented him with a hot homemade brownie.

Yes I smeared a little flour on my cheek & came out of the kitchen looking like I had worked hard over his brownie treat…  LOL 

Here’s how I made it:

Quick Brownie Assembly

I measured 3 Tablespoons of coconut oil, 2 Tablespoons of cold coffee & a dash of salt into the mug.

Then I warmed it in the microwave for about 15 seconds to melt the oil as I was measuring the remaining ingredients. I like to premeasure my ingredients because it makes it easier to pull this recipe off with lightening speed.With a few simple ingredients & 60 seconds in the microwave I can have a delicious, hot, single-serve brownie. So while the mug was warming, into my individual ingredient containers I added 3 Tablespoons of sugar to one, 2 Tablespoons unsweetened cocoa powder to another and 4 Tablespoons flour into a third.

By this time the mug was warmed & the coconut oil was melted. After a quick stir I added 1/4 teaspoon vanilla then dumped the sugar into the warmed liquid & stirred to blend, then the cocoa and stirred, then the flour and stirred one last time.

Microwave For Only 60 Seconds!

Into the microwave for 60 seconds and bada-boom, bada-bing – homemade hot brownie in a single-serve mug! (your time could vary based on the power of your microwave of course)

I quietly slipped off my SuperWoman cape & hid it back in the pantry before emerging from the kitchen, the wafting aroma of chocolate filling the room.

This delicious chocolaty brownie is ready to eat after cooling slightly. But sometimes I like to stir up a drizzly mix-n-pour chocolate frosting to pour over the top for additional gooeyness.

Trust me, you’re gonna want to add this no-cook melty chocolate topping to your brownie as well.

Single-Serve Microwave Mug Brownie

Ingredients

Ingredients:

  • 3 Tablespoons coconut oil melted (or melted butter)
  • 2 Tablespoons water (I always substitute with cold coffee here)
  • 1/4 teaspoon vanilla extract
  • dash salt
  • 3 Tablespoons sugar
  • 2 Tablespoons unsweetened cocoa powder
  • 4 Tablespoons all-purpose flour

Instructions

Directions:

  1. In a microwavable coffee mug mix 3 Tablespoons coconut oil, 2 Tablespoons cold coffee, 1/4 teaspoon vanilla extract, and a dash of salt. Microwave just long enough to-melt coconut oil. (about 15 seconds) Stir.

  2. Add 3 Tablespoons of sugar and stir. Add 2 Tablespoons cocoa powder and stir. Add 4 Tablespoons flour and stir.

  3. Microwave mug 60 seconds. Allow to cool slightly before eating.

    Hey TMR SIL here; last night I was going to try a new brownie recipe but after a day working in the yard and cooking dinner my feet revolted and I told your brother; was going to make dessert but was too tired. His reply was you know I was really looking forward to dessert tonight (Funny how we had not even talked about it till I said something) then I remembered our conversation about the brownies in a mug so I went to your blog and did a search. Then told your brother I found a dessert I can make in 3 mins!! He was amazed – did not tell him where i got it.
    Mixed it up severed it to him and after a few mins he stated “if I could lick the mug clean I would but can’t reach the bottom”. After a good laugh I told him – that was your sisters recipe. He was SO proud and said that is a keeper.

      I cannot <3 this comment enough! And I love that y'all like the mug brownie too. I typically add the mix-n-pour chocolate drizzle over the top for that gooey chocolate I crave (drizzle recipe link is included in the post) but the mug brownie is really good either way. And a 60 second dessert? Done & DONE! đŸ™‚ ~TxH~

    Very Cool Tammy T,

    I love any thing chocolate especially brownies. My sweetie is not as she says ” a chocolate person”. So there is usually no brownies around here because I’m the cook and would eat the whole pan full in 2 days. Not good for my figure… ha ha ha.

    So you have rescued me with this quick fix when I’m having my chocolate brownie or chocolate cake craving. Thanks !!!. The part of this I wanted to try was the dusting of flour on my face but I have no one to impress with my cooking speed skills. You are such a crack up when writing. Thanks for the inside humor too. Makes it fun…. Greg

Although I can’t quite wrap my brain around someone not being a ‘chocolate person’ (although I know others in that camp too) at least this single-serve brownie will give folks in the opposite ‘Give-me-all-the-chocolate-I-can-stand’ camp a little sumpin’… đŸ˜€ ~TxH~

    I am so happy right now! I visited this site way back and then my memory didn’t serve me well to find it again. I lucked onto it just now because I LOVE Brownies! Oh such nice folks to visit and such wonderful stories and ideas! I’m so glad you’re still here!! And THANK YOU for the brownie recipe. I do the same thing with cake mixes. I mix a box of devil’s food with a box of angel food cake in a big zip lock. Then I put in a mug, 3 T. of cake mix, 2 T. of water, stir well until frothy, then microwave for 1 minute. It’s called 3-2-1 cake and I can’t take credit for it. However, when it’s done, I put a scoop of vanilla ice cream on it. Wow! Talk about quick and satisfying. So I was really thrilled to hear about a Brownie version! So nice to be back and thanks again! God bless all here!
